I'm forever on a quest to get more fruit and veg into my son. He eats it, but not at the quantities I'd like so I've been playing around with smoothies as a way to get more of the good stuff into him.
My latest creation is my kale, avocado and banana ice lolly which both he and I love.
To make it I simply blend 2 cups of water with 2 cups of kale, then add 1/2 avocado and 3 bananas, all blended into a smoothie and poured into ice lolly moulds to set in the freezer.
A simple easy healthy treat for summer!
